Sweet potato and lentil curry

I’m currently trying to eat healthier, eat clean and shed the few lbs I gained on holiday last week. I made this the other night, tweaked from a recipe in my GoodFood magazine and wanted to share:

1 red onion, chopped

1 tsp cumin

1 tbsp medium curry powder

100g red lentils

2 sweet potatoes, chopped into chunks

1 can chopped tomatoes

500ml vegetable stock

1 can chickpeas, drained

1. Fry off the onion in a little oil until soft. Add the cumin and curry powder and cook for another min on a low heat. Add the lentils, sweet potatoes, chopped tomatoes and the stock.

2. Bring to the boil, then cover and simmer for approximately 25 mins until the lentils and sweet potatoes are tender.

3. Add the chickpeas, stir and heat through.

I served it with skinned and boned chicken thighs, marinated in tikka spices and then cooked under the grill, tip they get that bbq look!

Add some natural yogurt on the side.

Delicious! And healthy! And really cheap too!
