Roast broccoli

I keep going on to my friends about how important it is to eat your vegetables. Not just any vegetables, but proper green vegetables like spinach, kale, cabbage, sprouts, beans etc.. I tried this recipe recently for roast broccoli and loved it. I don’t think I’d had roast broccoli until then.

1 head of broccoli

Drizzle of olive oil

1 tsp of crushed coriander seeds

1. Heat oven to 220 degrees (approx gas mark 8)

2. Break the broccoli into little trees and lay out on a shallow roasting tray.

3. Drizzle with oil and sprinkle with the coriander seeds.

4. Bake for about 25 minutes, until they are tender and the little broccoli leaves are charred.
